Some recipes become part of a household almost by accident.

You make them once on a quiet evening, then again a few weeks later, until one day you realize they’ve quietly become woven into the rhythm of your life. The kind of meal that fills the kitchen with the smell of garlic, butter, and Parmesan long before dinner is ready, inviting everyone to linger a little closer.

This creamy chicken rigatoni is one of those recipes.

Rich enough to feel indulgent, yet simple enough for an ordinary weeknight, it’s the kind of dinner best enjoyed with a glass of wine, warm bread on the table, and nowhere else to be. It’s comforting without being heavy, elegant without trying too hard, and proof that some of life’s greatest pleasures are surprisingly uncomplicated.

INGREDIENTS

250g rigatoni (or pasta of choice, ideally fresh from the market)
2 chicken breasts, sliced thinly
4 cloves garlic, finely sliced or minced
2 tbsp unsalted butter
6 tbsp crème fraîche
Zest of 1 lemon
Juice of ½ lemon (or to taste)
Salt & freshly ground black pepper
Fresh parsley, finely chopped (for garnish)
Reserved pasta water (about ½ cup)
Optional: pinch of chili flakes

METHOD

  1. Bring a large pot of salted water to a boil. Cook the rigatoni until just shy of al dente. Reserve about ½ cup of the starchy pasta water before draining.
  2. In a large skillet, melt 1 tbsp of butter over medium heat. Gently sauté the garlic (and chili flakes, if using) until fragrant and just golden, don’t let it burn.
  3. In the same pan, add the remaining 1 tbsp of butter. Season the sliced chicken with salt and pepper, then sauté until golden and fully cooked.
  4. Lower the heat. Stir in the crème fraîche, lemon zest, and a splash of pasta water. Let it melt together until silky and smooth.
  5. Add the cooked rigatoni to the pan. Toss gently but thoroughly, allowing the sauce to coat every ridge and curve of the pasta. Add more pasta water as needed to emulsify into a glossy sauce.
  6. Add a squeeze of lemon juice, salt, and pepper to taste. Serve immediately, topped with a handful of fresh parsley and a glass of something nice.
